  • Baby Potatoes: I love the size of baby potatoes! Feel free to use any potato, just be sure to cut them down so they cook faster.
  • Red Bell Pepper: Use any color or combination of bell peppers you like!
  • Yellow Onion: I used about ½ medium onion and diced it small.
  • Olive Oil: For cooking and the potatoes and veggies.
  • Garlic Powder: Adds tasty garlic flavor!
  • Oregano and Parsley: Delicious herb seasonings to make this recipe flavorful!
  • Salt and Pepper: Season to taste.

Sausage and Potato Skillet Recipe

If you love one skillet dinner recipes like me, then this sausage and potato skillet is for you! It’s a quick and easy meal for those busy nights and your family will LOVE it.

  1. Prepare: Cut the sausage into ½-inch thick rounds. Cut the potatoes into 1-inch pieces, and the bell pepper into 2-inch long sticks.
  2. Season the Potatoes: Heat the olive oil in a large skillet or cast-iron skillet over medium-high heat, add the potatoes to the skillet, and season with the garlic powder, oregano, parsley, salt, and pepper.
  3. Cook the Potatoes: Cook the potatoes, stirring frequently to evenly brown until the potatoes are tender about 15 minutes. Remove the potatoes from the skillet and set aside.
  4. Cook the Sausage and Veggies: To the skillet add the sausage, onion, and red bell pepper. Cook until the vegetables are tender, about 5 minutes.
  5. Combine: Add the potatoes back to the skillet with the sausage, stir, and cook everything together for another couple of minutes. Remove the skillet from heat and serve.

There are so many ways to enjoy this comforting sausage and potato skillet recipe! Here are a few ideas to make your skillet dinner outstanding.

  • Sausage: For this recipe, I used a beef smoked sausage but you can use pork, turkey, or chicken sausage. Another fun variation would be to use a andouille or spicy sausage!
  • Vegetables: Try adding more vegetables to the skillet such as green beans, zucchini, mushrooms, or any of your favorites. Chop the vegetables into bite-size pieces and cook them with the bell pepper, onion, and sausage. 
  • Potatoes: You can boil the potatoes for 5-8 minutes before cooking in the skillet to shorten the skillet cooking time.
  • Herbs: Have fun with the herb flavors! Switch it up and use an Italian seasoning blend or mince up some fresh herbs!
  • Make it Spicy:  If you like your dishes a bit on the spicy side use a spicy Italian sausage. You can also garnish with red pepper flakes or drizzle it with your favorite hot sauce!

Storing and Reheating Leftovers

This quick and easy sausage and potato skillet meal is perfect for leftovers! Sometimes I double the recipe so I have lots of leftovers because it’s great for lunches throughout the week.

  • In the Refrigerator: Store leftovers in an airtight container in the fridge for up to 4 days.
  • In the Freezer: Once cooled, transfer leftover to an airtight container or freezer-safe sealable bag. Freeze for up to 1 month.
  • To Reheat: Reheat leftovers in an oven set to 375 degrees Fahrenheit for 10 minutes if refrigerated, and 15-20 minutes if frozen. You can also microwave until warmed though!
